For Brazil, I highly recommend the Brazilian side of Iguazu Falls ( best view since most of the falls are in Argentina) and staying at Hotel Das Cataratas - truly one of the highlights of my 50 years of traveling!
Canadian but an EU passport might be useful. Be careful in São Paulo. My host would not let me go out alone. A friend who did was mugged three blocks into his walk. Anglos are targets. Safety aside, Brazilians are warm, funny, melodic people.
1. I was there in 2012 and at the time the 4th best restaurant in the WORLD was in Sao Paolo. It is still a 2-Michelin star restaurant in Sao Paolo named D.O.M. and was unreal. I had steak ,my wife had some kind of Amazonian fish. It was very special- it was also more special because I didnt have to pay the bill :>)!
2. Find any churrascaria. The meat, fruits and vegetables are all local and it's not expensive. Simply the best.
3. Be careful. I had a driver and his car had bullet proof windows because the thing at the time was at stop lights especially, someone would come up and break your window and steal the car.
Go to Museo Afro Brasil! You will need a lot of time or break it up over several days. I did not get a chance to see more than a third of it and I was there for 3 hours! The Atlantic slave trade and African cultures permeate Brasil. It’s a must see if you have the time.

Irish passport- free travel in Schengen and UK and pretty straightforward for most countries

Brazil - I recommend Iguazu (Iguassu) Falls!!! Take a helicopter ride over the Brazilian side.
